If you are anything like me, you probably threw an extra piece of meat in the oven on Sunday. A Piece of Chicken or Steak, for a meal the following day. Today I have a piece of Roasted Pork Loin, 1 pound to be exact. I also invited a few friends over and they will be here in 30 minutes. I decided to go with a nice Coconut curry. I had a half bag of frozen vegetables that were mostly Carrots and Cauliflower. I diced up some Zucchini to go along with the Vegetables, my Vegetables also weighed in at 1 pound. Having a balanced meals is very important. The only other ingredients I needed was a Bechamel (white) Sauce, Curry Powder and #MaggieBrand Coconut Milk Powder Mix. I prefer the the mix as opposed to the milk in the can, simply because it will last longer, and it wont give an odd taste if i did not use all or needed it for another recipe. When the door bell rang the Rice had just steamed. I served this dish over a Jasmine Rice.
Recipe Serves 4
Ingredients
1 Pound Roasted Pork Loin Diced
1 Pound Frozen & Fresh Vegetables (Dutch Mix)
4 Ounces Bechamel Sauce (Any Cream Sauce In the Pasta Isle @ Your Local Market)
2 Tablespoons Of a Good Curry Powder
1 Tablespoon of Maggie Brand Coconut Milk Powder Mix
1 Cube of Maggie Brand Chicken and Pepper bouillon
1/2 Cup Water
Salt & Pepper To Taste
Method
Dice Pork and place on side. In a Skillet Pan add remainder of the ingredient, bring to a boil then a simmer, add Pork and Simmer Low For 15 Minutes. Serve on bed of Jasmine Rice. Enjoy!
